100% Blue Mountain Coffee, Ground

Jablum is the retail label of the Mavis Bank Coffee Factory, one of the oldest and largest Blue Mountain processors on the island. Grown between 3,000 and 5,500 feet, the beans are certified by the Jamaica Agricultural Commodities Regulatory Authority — the same certification that makes 'Blue Mountain' a protected name.

Tasting notes
Mild, low acid, cocoa and toasted nut. Smooth enough to drink black.
Pairing
Best black, with hardo bread and butter.

Traditional Jamaican Jerk Seasoning

Made in the village of Walkerswood in St. Ann since the 1970s, this wet rub of scotch bonnet, pimento, escallion and thyme is the standard reference for jerk outside of a pimento-wood drum.

Tasting notes
Pimento-forward, salty, herbaceous from thyme and escallion.
Pairing
Rub on chicken overnight, then grill. Serve with rice and peas.

Water Crackers

Excelsior has been baking in Kingston since 1936, and their water crackers are the base layer of Jamaican snacking: with cheese, with pear, with mackerel rundown.

Tasting notes
Dry, lightly salted, crisp. Made to carry whatever you put on it.
Pairing
With sliced avocado and a pinch of salt, or with tinned mackerel.
